It’s a cheese original from the Italian cuisine. There is a Danish variant, but the Italian tradition is more ancient. The city of origin of this cheese was Aversa (Caserta).

The ostrogoths were the ones who introduced buffaloes into Italy. Mozzarella can also be made from cow or sheep milk.

This fibrous and fatty cheese is used fresh and soft, and it’s eaten solid or melted. Its major use and the one that gave it fame is pizza making, where it’s used fresh and dried. It is put on the mass before baking it in the oven. It is used also fresh on salads.
