Boiled ham
A boiled cold cut, a pork product.
Its most remarkable characteristics are the pink colour and a softer flavour compared to other type of hams. Therefore, in some places of Spain, it is called jamón dulce (sweet ham).
It is composed of an only piece – made of mince and animal fat – to which a big quantity of brine is injected through a procedure called “injection”.
The meat can be obtained from the rear pork leg, but also from other parts. There are substitutes that are elaborated in the same way, but using turkey meat.
