Elaboration
Amasar la esponja (harina, levadura y agua) durante 6 minutos. Dejar la masa fermentar hasta que doble su volumen.
Poner todos los ingredientes en la amasadora excepto la esponja y la mantequilla y amasar durante 7 minutos.
Añadir la mantequilla y seguir amasando 3 minutos más.
Incorporar la esponja y prolongar el amasado 6 minutos.
Extender la masa con la ayuda del rodillo hasta conseguir un grosor aprox de 11mm.
Dejar reposar el pastón 5 minutos para que la masa se relaje y se puedan cortar las berlinas.
Cortar la masa, fermentar y freír.
Rellenar las berlinas con crema y espolvorear con azúcar glass.
