It is a pseudocereal although it is treated as a cereal for its high starch content. Quinoa belongs to the same family as spinaches and beets, and it comes from the Andean highlands. It is a food with great nutritional values thanks to its content of high biological value proteins that have all the necessary amino acids. It has no gluten so it is ideal for celiacs. To be cooked, it is first washed in abundant water, drained and boiled in water or boiling broth at a slow heat for about 12 to 15 minutes. It can be eaten alone or with vegetables.
