  • Place in the oven and cook until the centre of the piece reaches 65 ºC.
  • Remove from the oven and let stand.

  • Prepare gravy.
  • Pour the sauce over the pork and heat up in the oven being careful not to boil as it will harden.
  • Serve with the mashed potatoes.
