Elaboration
  • Steam the clams adding a small dash of Txakoli or some other white wine, fumet, a bay leaf and some grains of black pepper.
  • Keep the clams for another dish.
  • Add fumet to reach 250 ml, once it is cold, sprinkle with parsley and grind it using the Thermomix
  • Leak and add 2 g of soya lecithin
  • Put it in a washing-up bowl of 25 cm of diameter minimum.
  • When ready to use, whip using the blender and leave to rest 1 minute.
