Elaboration
Masa de los crepes:
- Saltear ligeramente los gusanos y dejarlos enfriar.
- Triturarlos hasta convertirlos en una pasta, añadir la harina y la sal, seguir triturando. Tamizar.
- Templar la leche y el agua junto con la mantequilla hasta que se funda.
- Añadir los huevos a la harina y agregar poco a poco la leche, el agua y la mantequilla.
- Batir hasta que la mezcla quede fina.
- Dejar reposar en la cámara 30 minutos.
Elaboración:
- Calentar una sartén ligeramente engrasada a fuego medio-alto.
- Verter un poco de la mezcla y cocinar durante aproximadamente 2 minutos, darle la vuelta y cocinar por el otro lado.
- Servir caliente o frío con el relleno dulce o salado.
