Elaboration
Para el pudin:
- Cortar la cebolla en brunoise y el puerro en medias-lunas y pocharlos.
- Desengrasar la verdura y triturarla con un poco de leche.
- Para el aparejo: Batir los huevos, añadir la leche, la nata, la sal y la pimienta blanca.
- Engrasar los moldes con margarina.
- Mezclar el aparejo con la verdura triturada , echar la mezcla en los moldes engrasados y cocer al baño maría en el horno a 160 ºC durante 60 minutos, comprobar que está cuajado.
- Dejar enfriar, desmoldar y trocear.
Para la muselina de espinacas:
- Cocer a la inglesa la espinaca.
- Hacer una salsa besamel y mezclarla con la espinaca.
- Emplatar el pudin acompañado de la muselina.
