Elaboration
  • Infuse the cream and the milk with the coffee.
  • Mix the yolks and the sugar well.
  • Lighten the mixture with a little of the cream and milk.
  • Bake at 82 ºC and strain through a sieve over the chocolate cover and the gelatine strips.
  • Beat the mixture until smooth, cover it with the cling film tightly and leave it aside in the fridge until it solidifies.
