Elaboration
  • Heat the milk, powdered milk, glucose and cream.
  • In a separate bowl, mix the yolks, sugar and stabilizer, lightening it with the other mixture.
  • Pour the rest of the mixture and heat until it reaches 85 °C.
  • Chill in a reverse bain-marie.
  • Add the peeled and chopped banana and mix well.
  • Churn it in ice-cream maker.
