For this recipe, the following elaborations are needed:

For the sauce:

  • Cut the garlic and the onion into brunoise, soften and add flour. Cover with the fumet. Bring to the boil and add salt.
  • Meanwhile clean and cut the mushrooms into strips and sauté add the wine and let reduce. Pour the sauce on top and bring to the boil.
  • Place the salmon in the sauce, add the prawns and bake at 200 ºC until the salmon and the prawns and done.
  • Plate up and sprinkle over chopped parsley.
