  • Wash and deseed the apples, put them in a metal tray with wine and sugar.
  • Cover and bake at 180 ºC until the apples are cooked.
  • Once the apples are cooked, remove the skin and mash the mixture.
  • Mash and strain through a sieve and add the gelatin sheets at 70 ºC.
  • Cool it in the fridge. 
  • Pour the mixture into the siphon and charge one or two charges.
  • Keep chilled.
