Elaboration
  • Prepare a grilled pear purée.
  • Soften the butter at the same temperature as the pears’ purée and mix well.
  • In a separate bowl mix together the sugar, the dextrosa, the procrema, the ice cream glycerine and the salt.
  • Combine the two mixtures, mix well and churn in an ice cream maker.
