  • Prepare an American sauce, but don’t thicken it. Preferably made the previous day, as you need it cold to cook the beans.
  • Boil the beans, previously soaked, in the American sauce. It has to boil slowly and continuously so that beans don’t break.
  • Stir fry the peeled shrimps, and open the clams with the vapour from a piece of fumet or American sauce.
  • Once the beans are cooked, add salt and thicken.
  • The shrimp and clam garnish is added at the end.
  • Sprinkle parsley cut into brunoise.
  • Optional, add mussels.
