Elaboration
  • Soak the gelatine in plenty of cold water.
  • Heat the water and the sugar in a pot, and once it gets to 70 ºC, add the agar-agar and stir until dissolved.
  • Pour the mixture into a bowl, add the gelatine previously drained, and dissolve it well.
  • Add the guava purée, mix well and pour out the mixture into a rectangular recipient.
  • Keep the mixture in the fridge and cut into pieces when plating up.
