Elaboration
  • Finely chop the San Simón cheese with the rind included.
  • Heat up the milk in a pot and once it starts to boil add the cheese.
  • Stir with a metal whisk at a medium heat until the cheese completely dissolves.
  • Remove from the heat, add the cream and let the mixture stand for about 10 minutes.
  • Strain through a fine sieve, season with the smoked salt and leave to cool in the refrigerator.
  • Fill the siphon, apply the charge, shake and keep in the refrigerator until use.
