  • Heat the sugar, the water, the glucose and the cream of tartar all together until it reaches a temperature of 152ºC.
  • Meanwhile heat the honey until 130 ºC.
  • Once both temperatures have been reached, mix the mixtures and cook together until 165ºC.
  • Pour onto a silicone mat to cool down and slightly gloss.
  • Form cylinders.
  • Cut the piece with the help of a knife or scissors and leave to cool.
  • Store in a dry place.
