Elaboration
  • Preheat the oven to 210 ºC.
  • Make beurre noisette by cooking butter up to 150 ºC. Being careful not to burn it.
  • Strain the butter.
  • Mix flour, almonds, sugar and then add the egg whites one by one.
  • Add the beurre noisette, blend everything together and pour it into bite-sized silicone moulds. 
  • Cook at 210 ºC.
  • The approximate cooking time is 25-30 minutes.

Notes

  • In a modular oven, program 3 (ceiling)-4 (mouth)-3 (floor), air intake open.
