  • Dip the octopus three times in boiling water without salt then leave to boil for 30 to 40 minutes for an accordant to weight of (approximately) 2 kg.
  • If the octopus is too stiff, leave it to cool inside the water. If well-cooked, remove.
  • Once cold, separate the tentacles from the head and preserve in the fridge.
