For this recipe, the following elaborations are needed:

PLATING UP

  • Preheat the oven to 180 ºC.
  • With the almond crust pastry line individual tartlets and bake.
  • Peel an orange and cut into equal sized pieces.
  • Fill the tartlet with the black chocolate cream and add some peeled orange pieces.
  • Bake the tartlet for a few minutes.
  • Decorate the plate with the bitter chocolate sauce and the orange jelly.
  • Make an ice cream quenefa and place it inside the orange circle.
  • Decorate the tartlet with glazed orange.
