Elaboration
  • Preheat the oven to 180 ºC.
  • Mix all the ingredients together using a spatula along with the cold diced butter until obtaining a smooth sandstone mixture.
  • Place on baking paper and bake in the oven.
  • Keep in a warm and dry place.   

Notes

  • The kneading technique used in this recipe is «sablage».
  • First the flour is mixed with the butter, either by machine or by hand. With this method the particles of flour (and therefore, the gluten) are «wrapped» in a grease protection making them waterproof and therefore avoiding them joining together.
  • The end mixture is granular.
