  • Make a dark caramel with half of the water and the sugar at 200 ºC.
  • Stop the cooking by adding the other half of the hot water to the caramel and leave to cool.
  • Dice the bananas into 3-4 cm cubes.
  • Put the banana inside a vacuum bag with the cold caramel and the rum.
  • Vacuum-pack for 24 hours.
