Celery belongs to the Umbeliferae family, also known as Apiaceae, which has around 250 genus and more than 2500 species.
Most are plants grown in the cold seasons and they are known for their abundance of aromatic substances. Normally the seeds contain the oils that give them their taste. In some species, all the parts of the plant are aromatic. Some types of this family contain certain compounds named furanocoumarins that may cause dermatitis to people who react to them.
