Elaboration
  • Place the gelatin sheets into cold water.
  • Pour some of the apple juice into a saucepan and heat. Add in the sugar and the gelatin sheets and mix until dissolved.
  • Add in the xanthan gum and blend until combined.
  • Let the mixture cool down in the fridge so that the xanthan gum gets fully hydrated and the apple juice sets.
  • Whisk the gelatin and strain. Then pour into a small siphon and attach two filters.
