Elaboration
  • Preheat the oven to 190 ºC.
  • Mix the sugar and the instant coffee together. Set aside.
  • Soften the margarine in the stand mixer with the flat beater on. Add in the sugar and coffee mixture and mix until just combined.
  • Incorporate the egg yolk.
  • Add in the flour (which has previously been sifted).
  • Divide the dough into cookies of 8-10 g.
  • Bake at 190 °C for 15 minutes.
  • Let them cool down completely and then coat them with melted milk chocolate.
