- Preparar los saltamontes retirándoles las alas y las patas.
- Freír los saltamontes hasta que queden dorados.
- Fundir el azúcar con un poco de zumo de limón hasta que coja un color dorado oscuro.
- Bajar el fuego e incorporar los saltamontes, remover constantemente hasta que estén recubiertos de una capa de caramelo.
- Volcarlos sobre una bandeja con papel sulfurizado y separarlos en caliente con ayuda de una pinza o tenedor para que no se peguen unos a otros.
- Mantenerlos en la estufa a 30 ºC o en un recipiente hermético en un sitio seco.
