  • Preheat the oven to 100 ºc.
  • Dissolve the sugar, glucose, water and a little lime juice (to help avoid the mixture forming lumps).
  • Add the ground cayenne pepper when the water reaches 155 °c, stir, pour onto silicone paper and let cool.
  • Grind to a powder using a Thermomix.
  • Sprinkle on a tray with baking paper and bake in the oven until the powder melts.
  • Remove from the oven and place another sheet of parchment paper on top and roll the melted caramel using a rolling pin to achieve a thin sheet.
  • Break into small pieces.
