St. George’s mushrooms are the most appreciated mushrooms in Euskadi and Navarre, the very best of the season.

It’s highly sought picked and appreciated.

Its colour can range from white to yellow. Generally, its cap is hemispherical but it gets fattened and wider as it grows. Its diameter goes from 3 to 15 cm. The sinuate gills are white and crowded.

It’s very fleshy, compact and regular with a dull, smooth and dry surface. The stipe is white, short and robust; it’s generally straight although sometimes it curves a bit. The flesh is fibrous especially on adults but also fragile.
