Isomalt sugar
It comes from sugar and it has the same taste and appearance but half its calories. It is suitable for diabetics and it is not sticky.
This substitute is not artificially made since it is solely crafted from sugar beet. This is why its sweetness is pure, without leaving a strange aftertaste.
For its elaboration, first the glucose and fructose from the sugar are combined again with the help of natural enzymes and then everything is hydrogenated. The result is a new substance, very similar to sugar in many ways. It looks the same, tastes the same and it has as many uses –if not more- than sugar.
Its nutritional value is 2 kcal per gram. It is very recommendable for diabetics and it is used in many confectionery products for kids as it does not cause caries. Isomalt sugar does not create the acids that could dissolve tooth enamel.
Nowadays, many products such as candy, chewing gums, chocolates and baked products use Isomalt.
Besides, Isomalt is great for confectionery in candy because it is highly resistant to humidity so the elaborations last longer, are not sticky and do not get soft at high temperatures or in very humid places. They also show a completely transparent and beautiful crystalline colour.
