Horno de pastelería

They are used in bakery, they are electric and they usually have the following characteristics:

  • Exact measurement of the heat in the upper and lower part and (the) sides.
  • Very low ceilings.
  • The moisture in the oven can be regulated.
  • The doors have a transparent glass panel and light inside so one can check the evolution of the baking products without having to open the oven.
  • The lower part usually has a stove to ease the fermentation process.
