They are also known as golden needle mushrooms or enokitake.

They are white long- stemmed mushrooms, very popular in Chinese, Japanese and Korean gastronomies.

These mushrooms belong to the genus Flammulina. There are diverse wild types, different in colour, texture and size known as “winter fungus”, “velvet foot” or “velvet stem”. They can be bought fresh or canned. They are commonly used in soups, although they can also be added to salads and other dishes.

They are crunchy and can be preserved in the fridge for up to a week. Experts recommend using fresh enoki with a white firm and shiny cap whereas those with brown or slimy stems should be avoided.
