Cornicabra olive oil

Cornicabra or Cornezuelo extra virgin olive oil comes from an olive with a peculiar shape similar to a horn, hence its name in Spanish.

Some of the characteristics of this olive are that it is slightly curved, elongated, asymmetric, protuberant and flat along the back with red-wine colour when ripening.

The oil is obtained through the traditional pressing method, filtering and packaging, without any manipulation but a mechanical one. In doing so, the use of solvents to correct quality defects is not allowed. However, it is allowed for other kinds of olive oil and their seeds.

These oils are fruity, aromatic and slightly spicy. They are stable due to their high levels of monounsaturated acid content (oleic acid) and polyphenols.
