Cod tripes are the pneumatic or swim bladders which are a kind of sac, filled with gasified air, and placed in the intestine next to the backbone attached to the concavity of the thick fishbone; from its beginning to the anus. This bladder is thick and composed by a jelly-like substance. It makes for a subtle delicacy when it is fresh and  really appreciated after it has been salted.

Not all fish have this bladder.
