Crystal pepper
A typical kind of pepper from Navarre and La Rioja. The crystal pepper is without a doubt the highest quality recognized pepper , for its smoothness in mouth, its sweet taste and slight sourness. They are very juicy.
Given their fineness, they are sold preserved and cut in strips. They are really hard to peel off by hand without water and it’s impossible to obtain the whole pepper when peeling it. It’s a hard to find product, given its difficult preparation.
They are used for tastings, marinated or sautés in a pan. Garlic and a good oil are the most appreciated soul-mates for this ingredient.
